Prune & Apple Quinoa Salad
There’s nothing more meal-preppable and satiating than a good quinoa salad. We’ve packed this one with nutrients from the crisp apples to the kale to the always delicious Amaz!n Prunes. We’re not in the business of boring lunches and neither should you.

Ingredients
1/4 cup extra virgin olive oil
2 tbs red wine vinegar
1 small clove garlic, minced
1 1/2 tsp honey
1/4 tsp kosher salt, plus more as needed
Fresh pepper
1 1/2 cups cooked quinoa, cooled
3 cups packed chopped kale
1/2 cup Sunsweet Pitted Prunes, chopped
1 cup chopped apples
1/2 cup roasted salted pepitas
Directions
Begin by preparing the vinaigrette. Add the olive oil, red wine vinegar, garlic, honey, salt, and a few cracks of fresh pepper to a jar, seal it, and shake vigorously until combined. Taste, and add additional honey or salt as needed.
Add the kale to a large bowl and drizzle with two to three teaspoons of the dressing. Gently massage the dressing into the kale until it has softened a bit. To the same bowl, add the quinoa, apples, pepitas, and prunes. Drizzle the dressing over the top and toss to combine. Taste and add a few pinches of salt if needed.
Divide between two bowls for a meal or serve as a smaller side for 4.
