Delicious Pumpkin Prune Loaf
Wet 2 eggs or flax eggs 1/2 cup pumpkin puree 3/4 Cup Sunsweet Amaz!n prune juice 3/4 Cup Sunsweet Amaz!n diced prunes Dry Pinch sea salt 1 teaspoon baking soda 2 teaspons pumpkin pie spice 1/4 cup coconut sugar 1 1/2 cup gluten free 1-to-1 baking flour 1 tablespoon of fresh squeezed lemon juice

Preheat the oven to 350°F. Whisk together dry ingredients in a medium bowl. Whisk together all wet ingredients in a large bowl. Add the dry mix to the wet mix and stir until well combined. Pour into a batter into a greased loaf pan and bake for 50 minutes to 1 hour. Let sit 15 minutes before removing from pan and slicing. Makes 8 servings.
