Ingredients
Prune Oatmeal To-Go Cups
1 cup non-dairy milk 1/4 cup 100% real maple syrup 1 Tbsp lemon juice 2 eggs or vegan egg substitutes 1/3 cup Sunsweet Amaz!n Diced Prunes, plus additional for garnish 1 cup rolled oats 1 cup oat flour (rolled oats ground in a high-speed blender) 1 tsp baking soda 1/2 tsp ground ginger 1/2 tsp ground cinnamon, plus additional for garnish 1/4 tsp sea salt
Instructions

Preheat oven to 350°F.

Whisk together non-dairy milk, maple syrup, lemon juice and eggs in a large bowl. Stir in Sunsweet Amaz!n Diced Prunes.

Add the rolled oats, oat flour, baking soda, ginger, cinnamon and salt; stir together until well mixed.

Scoop equal amounts into 12 non-stick muffin cups and add a few diced prunes and a dash of cinnamon to the top of each. Bake for 25 minutes, then let cool before serving.
