  • ½ cup chopped green onions, divided

  • 1 garlic clove, minced

  • ¼ cup chopped walnuts

  • 1 tsp olive oil

  • 3 tbsp tomato sauce

  • 2/3 cup Sunsweet Prunes

  • 1 cup sour cream

  • salt & pepper to taste

Heat the olive oil in a small skillet and cook 1/3 cup green onions, garlic, and walnut pieces for 2 to 3 minutes or until green onions have softened. Add the tomato sauce and cook, stirring constantly for 2 minutes. Transfer to a tall vessel and let cool for 15 minutes.

Add half the prunes to the tomato mixture along with the sour cream. Blend with a hand blender until smooth, season with salt and pepper.

Cut the remaining prunes into fine strips. Transfer the dip to a bowl and sprinkle with remaining green onions and prune strips.
