A great wake-up or pre-workout drink, this smoothie will give you the energy you need!

  • 1 cup packed baby spinach

  • 1 medium cucumber, diced

  • 1/3 cup quartered Sunsweet Prunes

  • 1 tsp chopped ginger

  • 1 tbsp quick cook oats

  • 1 and 1/4 cup apple juice

  • 2 tbsp lemon juice

  • 1 tbsp maple syrup


Wash spinach thoroughly, cut off thick stems. Peel and grate the ginger. 


Put all these ingredients into a blender with the soluble oats, apple and lemon juice and blend until smooth. Dilute with a little mineral water if desired and add maple syrup to taste.


Pour the smoothie into glasses and serve.


Tip: Thread thin cucumber slices and one prune onto a skewer and serve it with the smoothies.


You could use pear or pineapple juice instead of apple juice.
