Oatmeal Date & Macadamia Cookies
With wholesome oats, sun-sweetened dates, and crunchy macadamia nuts, these chunky oat-and-nut cookies are a naturally sweet treat—the perfect recipe to add into your cookie rotation.

Ingredients
Dry Ingredients
- 1 cup oat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp pumpkin pie spice
Wet Ingredients
- 2 Tbsp butter or coconut oil
- 1/3 cup coconut sugar
- 1/3 cup liquid sweetener of choice (maple syrup, honey, agave, etc.)
- 1 egg
- 1 tsp vanilla extract
Mix-Ins
- 1 1/4 cups rolled oats
- 1/4 cup macadamia nuts, chopped
- 1/4 cup Sunsweet® Pitted Dates, chopped
Instructions
Preheat oven to 350°F (180°C).
In a bowl, stir together dry ingredients. In a separate bowl, use a hand mixer to beat together butter, coconut sugar, and sweetener. Add egg and vanilla extract and mix to combine. Add dry ingredients into wet and beat on low, until a batter forms. Fold in rolled oats, macadamia nuts and dates. Line a baking sheet with parchment and add spoonfuls of batter, leaving space in between. (I used an ice cream scoop to portion my cookies!) Press down slightly.
Bake 15-18 minutes, until slightly browned. Cool on a wire rack.
