  • 1 Tbsp butter
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1/2 cup apples, diced
  • 3 stalks celery, sliced
  • 1 head cauliflower, cut into small florets (5-6 cups)
  • 1/4 cup pecans, chopped
  • 1/2 cup Sunsweet® Pitted Dates, chopped
  • 1 Tbsp fresh sage
  • 1 Tbsp fresh thyme
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp parsley (for garnish)


Preheat oven to 450°F (230°C). Heat a skillet over medium high heat. Add butter and melt in the pan, followed by onions, garlic, and mushrooms. Cook 5-7 minutes, until reduced and softened. Add apples and celery, cooking for an additional 4-5 minutes. Combine sautéed veggie mixture with cauliflower florets, chopped pecans, dates, herbs, and spices. Transfer to a greased 9x5-inch baking dish and roast 30-40 minutes, tossing halfway through, until cauliflower is beginning to brown and pecans are toasted. Garnish with parsley, serve, and enjoy!
