Ingredients

  • 1 1/2 cups PlumSmart® or PlumSmart® Light
  • 1/2 cinnamon stick, broken
  • 4 tsp cornstarch
  • 1 cup Sunsweet® Amaz!n Prunes, chopped and divided
  • 1 cup spelt or whole wheat flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup whole milk
  • 2 eggs
  • 2 apples, peeled, cored and grated
  • 1/4 cup canola oil, divided

Instructions

In saucepan, heat 1 1/4 cups juice and cinnamon stick over medium heat; bring to boil.

Whisk cornstarch with remaining juice; whisk into boiling mixture and cook for 30 seconds.  Add 1/2 cup prunes, stirring to combine.  Remove cinnamon stick. Set aside.

Mix together flour, baking powder, cinnamon and salt; whisk in milk and eggs.  Stir in remaining prunes and apples.

Heat 1 Tbsp oil in skillet set over medium heat; cook pancakes, 3 at a time, for two minutes per side.  Repeat with remaining oil and batter.  Serve with reserved prune topping
