Amaz!n Pumpkin Prune Loaf

  • 1 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp nutmeg
  • ¼ tsp cloves
  • ¼ tsp allspice
  • ¼ tsp salt
  • 1 cup canned pure pumpkin purée
  • 1 cup granulated sugar
  • ⅓ cup olive oil
  • 2 eggs, beaten
  • 1 cup chopped walnuts, divided
  • ¾ cup chopped Sunsweet Amaz!n Prunes
  • ½ cup mini chocolate chips


Preheat oven to 350°F. Line 9 x 5-inch loaf pan with parchment paper.

In small bowl, whisk together flour, baking soda, spices, and salt.
In large bowl, stir together pumpkin purée, sugar and oil until smooth. Whisk in eggs. Add flour mixture to pumpkin mixture and stir until just combined.
Set aside 1 Tbsp walnuts and stir remaining walnuts into batter. Add prunes and chocolate chips. Stir until combined. Pour into prepared loaf pan. Sprinkle with reserved walnuts.
Bake for 1 hour or until loaf springs back when touched. Let cool for 15 minutes before slicing.
