Pumpkin Spice Waffles

A deliciously fluffy, easy pumpkin spice waffles recipe for a Belgian waffle maker! Made with a simple batter using minimal ingredients, it’s an irresistibly flavorful and convenient warm breakfast that you can whip up quickly.

Ingredients

Pumpkin Spice Waffles:

1 cup all-purpose flour

2 tsp baking powder

1 tsp cinnamon

½ tsp cardamom

¼ tsp ground ginger

¼ tsp salt

 cup pumpkin puree

 cup prune juice

1 egg

 

Topping Ideas:

maple syrup

whipped cream

pumpkin seeds

chopped prunes

pad of butter

Instructions

- Whisk together dry ingredients.
- Separately, whisk together wet ingredients.
- Add dry mixture into the wet mixture, mixing well to combine.
- Preheat the waffle iron. Once heated, spray well with cooking spray
- Scoop batter into heated waffle iron. (My 7-inch round Belgian waffle maker requires 1 cup batter.)
- Close and cook according to your waffle maker’s specifications. (Mine takes about 4 minutes.)
- Option: Pour batter onto a heated griddle or fry pan to make pancakes! Serve warm with desired toppings and enjoy!
- Yields 2 cups of batter or 2 waffles, depending on the size of the waffle maker. (Some smaller waffle makers only use ½ cup of batter, which would yield 4 waffles.)
