Delicious Tahini & Date Pancakes
Dry Ingredients 2/3 cup oat flour 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp cinnamon pinch of salt Wet Ingredients 2 eggs 2 Tbsp yogurt 2 Tbsp tahini 1/4 cup almond milk Mix-In 8 Sunsweet® Pitted Dates, chopped

In a large bowl, whisk the dry ingredients together. In a separate bowl, whisk the wet ingredients together. Add the wet mixture into the dry and mix to integrate. Fold in dates. Preheat a skillet over medium heat and spray with coconut spray or brush with oil. Add 1/4 cup of batter to the pan (an ice cream scoop is a great way to measure!) and cook 2-3 minutes until bubbling, and then flip. Repeat! Serve with syrup and your favorite toppings!
