Delicious Oatmeal Date & Macadamia Cookies
Dry Ingredients 1 cup oat flour 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1/2 tsp cinnamon 1/4 tsp pumpkin pie spice Wet Ingredients 2 Tbsp butter or coconut oil 1/3 cup coconut sugar 1/3 cup liquid sweetener of choice (maple syrup, honey, agave, etc.) 1 egg 1 tsp vanilla extract Mix-Ins 1 1/4 cups rolled oats 1/4 cup macadamia nuts, chopped 1/4 cup Sunsweet® Pitted Dates, chopped

Preheat oven to 350°F (180°C). In a bowl, stir together dry ingredients. In a separate bowl, use a hand mixer to beat together butter, coconut sugar, and sweetener. Add egg and vanilla extract and mix to combine. Add dry ingredients into wet and beat on low, until a batter forms. Fold in rolled oats, macadamia nuts and dates. Line a baking sheet with parchment and add spoonfuls of batter, leaving space in between. (I used an ice cream scoop to portion my cookies!) Press down slightly. Bake 15-18 minutes, until slightly browned. Cool on a wire rack.
