Preheat oven to 325°F. In a large bowl, combine all ingredients except for the cherries, apricots and almonds and mix together thoroughly. Spread out the cluster mixture on a sheet pan covered with parchment and sprayed with cooking spray. Pinch or roll together clusters the size of large peas until it is mostly clusters. Bake for 30 minutes, shaking the pan a couple of times during cooking so the clusters get golden and crispy. Cool and mix with the fruit and almonds.
