- 1 medium ripe banana
- 1/2 cup Sunsweet® PlumSmart™ Light
- 3/4 cup fat-free vanilla Greek yogurt
- 2 Tbs smooth natural-style peanut butter
- 2 Tbs plain granola
- 3 large fresh strawberries, hulled and thinly sliced
The night before, peel banana, slice into 1-inch sections, store in a zip closed bag, and freeze for at least 8 hours or overnight (or up to 1 week).
In this order, place the PlumSmart®, yogurt, peanut butter, and the frozen banana pieces in a large blender. Cover and blend until smooth.
Pour the mixture into a small bowl or large latte bowl. Top with granola and sliced strawberries just before serving.
