Ingredients
1 cup Sunsweet® Plum Amazins™
1 3/4 cups all-purpose flour
3/4 tsp baking soda
1/4 tsp salt
1 cup white chocolate chips or chunks
1/2 cup mini marshmallows
Cooking spray
3 tbsp brandy (optional)
1 cup semi-sweet chocolate chips
1/2 cup butter, room temperature
1/4 cup granulated sugar
1/4 cup brown sugar, packed
1 large egg
1 1/2 tsp almond extract
3/4 tsp vanilla extract
Instructions
Preheat oven to 325°F. Soak Plum Amazins in brandy for 5 minutes if desired; strain and set aside. Melt semi-sweet chocolate chips in microwave or in a bowl set over boiling water. Cool for 5 minutes. With an electric mixer, beat butter and sugars in a large bowl until light and well mixed. Add egg, almond and vanilla extracts; mix until smooth. Beat melted chocolate into butter mixture until incorporated. In a separate bowl sift together flour, baking soda and salt and stir into chocolate mixture. Stir in white chocolate chips, marshmallows and Plum Amazins. Spray 2 baking sheets with cooking spray or line with parchment paper. Drop cookie dough in large spoonfuls onto baking sheets, leaving 2 inches between each cookie. Bake for 12 minutes or until tops of cookies feel slightly firm when touched. Let cookies cool on baking sheets for 10 minutes. With a spatula, carefully transfer cookies to a wire rack and cool completely. Makes 12 cookies.
