Tropical Carrot Muffins

2/3 cup brown sugar

1/2 cup skim milk

1/4 cup vegetable oil

1 tsp coconut extract

1 egg

1 cup flour

1/2 cup quick oats

2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp each: salt and nutmeg

1 1/2 cups shredded carrots

1/2 cup each: Sunsweet® Plum Amazins and chopped pineapple (3 slices of juice packed pineapple)


Preheat oven to 350F and line 12 muffin cups with paper liners. Whisk together brown sugar, milk, oil, extract and egg in a large bowl. Stir together all dry ingredients and add to larger bowl, stirring just until combined. Lightly stir in carrots, Plum Amazins and pineapple. Spoon batter into prepared muffin cups and bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Makes 12 muffins.
