Ingredients

1 cup packed baby spinach

1 medium cucumber, diced

1/3 cup quartered Sunsweet Prunes

1 tsp chopped ginger
-
1 tbsp quick cook oats
-
1 and 1/4 cup apple juice
-
2 tbsp lemon juice
-
1 tbsp maple syrup
Instructions
Wash spinach thoroughly, cut off thick stems. Peel and grate the ginger.
Put all these ingredients into a blender with the soluble oats, apple and lemon juice and blend until smooth. Dilute with a little mineral water if desired and add maple syrup to taste.
Pour the smoothie into glasses and serve.
Tip: Thread thin cucumber slices and one prune onto a skewer and serve it with the smoothies.
You could use pear or pineapple juice instead of apple juice.
